Tasty Tuesday: Roasted Beet And Blue Cheese Salad

Hello again! As promised, I have another recipe for you featuring beets! The first time I ever had beets was in a roasted beet salad, so I thought it was only fitting to put together my own salad recipe highlighting them. I think they go really well with a sting cheese, like blue cheese or goat cheese, and the crunch of walnuts. I also love how pretty they look against red leafed lettuce, so I used a combo of that and romaine in this salad. I hope you enjoy this dish!

Oven Roasted Beet and Blue Cheese Salad



  •  about 3 beets, roasted and chopped (recipe HERE)
  • 1/2 a head of red leaf lettuce, finely chopped
  • 1 heart of romaine, finely chopped
  • 1/2 cup of raw walnuts
  • 1/3 cup of crumbled blue cheese
  • Salt and pepper to taste 
  • Your favorite vinaigrette dressing (my favorite recipe HERE)


Heat a small saucepan over medium heat. Add your walnuts to the pan and toast until lightly browned and fragrant. Remove from the heat and place on a plate to cool. Chop your lettuces and add to a large bowl. Add your chopped beets, walnuts, and blue cheese. Toss with dressing, season, serve and enjoy!
