Foodie Friday: Roasted Beets

Hello again and happy Friday! I hope you all had a fabulous week! I have a quick little recipe post for you today featuring a vegetable I did not enjoy until very recently, beets! The more I tried them, the more I realized I liked them. I have discovered I prefer the yellow beets to the deep red because they have a bit of a natural sweetness, but they are both delicious. Their taste is very mild, almost similar to a potato. I was always intimidated to cook them myself, but it is really quite simple. I love to use them in salads (a recipe I will have for you on Tuesday) or just eat them by themselves. They are packed with awesome vitamins and a step outside the box from the normal veggie. I hope you enjoy this dish!

Oven Roasted Beets



  •  Beets, thoroughly washed
  • Salt and pepper to taste
  • Aluminum foil


Preheat your oven to 375 degrees. Wrap your beets in aluminum foil and arrange on a baking sheet. Bake for about 40- 60 minutes, or until the beets are fork tender. Remove from the oven and let the beets slightly cool. Remove the skin from the beets, if they are fully roasted, it should come off easily with your hands or a paper towel. Dice and season with salt and pepper to taste. Serve and enjoy!
