Tasty Thursday: Simple Coleslaw

Hello again lovelies! Along with my Spring Sweat challenging workouts, I have decided to eat as healthy as possible also. I want to boost my results, so eating right and exercising is the best way to do it! I have been cutting out most carbs, with the exceptions of fruits, sweet potatoes, and small amounts of red wine. I was getting a little tired of salads all day every day, so I decided to switch it up a little. I wanted to make some pulled pork in the crock pot (recipe to come tomorrow) but I did not want the bread. I resolved instead to serve it over a bed of coleslaw. Cabbage is high in vitamin K and I do not eat it as often as I should, but I enjoy it in coleslaw. I wanted to make a slightly healthier version, so mine has grape seed oil instead of canola, light mayonnaise, and mustard. I hope you enjoy this simple, low carb side!

Simple Coleslaw



  • 1 small head of green cabbage, shreaded
  • 3 heads of garlic, minced
  • 1/2 cup light mayonnaise
  • 1/4 cup of mustard
  • 2 tablespoons of grape seed oil
  • 1/4 cup of apple cider vinegar
  • 1 tablespoon of sugar or 2 teaspoons of stevia
  • salt and pepper to taste



Shred cabbage into a large bowl. In a smaller bowl, whisk together garlic, mayo, mustard, oil, vinegar, sugar, salt, and pepper. Pour dressing over your shredded cabbage. Toss to combine. Refrigerate for a few hours. Serve and enjoy!
