Tasty Tuesday: Peach, Prosciutto and Mozzarella Skewers

Hello again! I hope you all had an amazing holiday weekend. My brother came to visit and it was so much fun spending time with him taking him around Dallas. Sometimes you forget to appreciate what lies in your own backyard and having guests helps me remember what a great city I live in. Thursday was also the beginning of College football, so we went over to our friend's house for a small get together. I wanted to bring a light appetizer that was also easy to handle. I found this simple recipe from The Comfort Of Cooking and put my own little spin on it. I have always enjoyed prosciutto wrapped melon, especially when I was in Italy because the melons there are much sweeter. Recently while at a local restaurant with my parents, they had replaced the melon with peaches and we all agreed that it was much better, so I decided to make the same swap with this recipe. These skewers are very simple to put together and the balsamic reduction can be used for many other recipes. I hope you enjoy this easy crowd pleaser!

Peach, Prosciutto and Mozzarella Skewers

With A Balsamic Vinegar Reduction

  • 1/2 pound of prosciutto, thinly sliced
  • 4 peaches, cut into 1 inch cubes
  • 10 mozzarella balls, cut in half
  •  3/4 cup of sugar
  • 1 cup of balsamic vinegar
  • chopped flat leaf parsley for garnish

Place the sugar and balsamic vinegar into a small pot and heat over medium heat. Cook until sugar is dissolves and the vinegar starts to reduce and become thick, much like a syrup. Remove from heat and let cool. Start assembling skewers by starting with a peach cube, then 1/2 of a mozzarella ball, then a prosciutto slice, and ending with another peach cube. Continue this process until your desired amount of skewers is reached. Finish by drizzling skewers with the balsamic mixture and garnishing with parsley. Serve and enjoy!
