Tasty Tuesday: Apple and Blue Cheese Salad with Apple Cider VinaigretteDressing

Hello again! I hope you are all having a great week so far. This weekend we had a bit of a cold front here in Dallas and it finally started to feel like fall. I wanted to create a light salad to pair with my dinner on Sunday, both highlighting one of my favorite fall fruits, apples! I will share the dinner recipe later this week, but let's start off with this salad. I love combining simple ingredients that pack a ton of flavor. The creamy blue cheese, crisp apples, and crunchy toasted walnuts give this salad so much texture and flavor. The dressing is light and tangy with a hint of sweetness from the apple cider and the maple syrup. It is sure to be a crowd pleaser at your dinner party as well as a go to dish for a light meal. Apple and Blue Cheese Salad

With Apple Cider Vinaigrette Dressing 


  Salad Ingredients:

  •  2 hearts of Romaine Lettuce, chopped finely
  • 1/2 cup of crumbled blue cheese
  • 2 Fiji apples, julienned
  • 1 English cucumber, finely diced
  • 1/2 cup of walnuts
  • 1 lemon, juiced (add juice to apple to keep from browning)

    Dressing Ingredients:

  •  1/4 cup of apple cider vinegar
  • 1/4 cup of apple cider
  • 1/4 cup of maple syrup
  • 1 tablespoon Dijon mustard 
  • 1/2 cup of olive oil
  • 1/4 teaspoon of salt
  • 1/2 teaspoon fresh cracked pepper


Heat a skillet over meduim heat. Toast the walnuts until slightly browned. Remove form the heat and allow to cool. Whisk together the apple cider vinegar, apple cider, mustard, maple syrup, salt and pepper in a meduim bowl to combine. Slowly add the olive oil while continuing to whisk. Chop all of your vegetables and combine in a large bowl with the blue cheese and walnuts. Toss with dressing to combine. Serve and enjoy!
