Tasty Tuesday: Buffalo Chicken Tacos

Hello again friends! Today's post is a delicious and healthy meal I made the other day for myself and the Hubs; Buffalo chicken tacos. I adapted it from a recipe I found on Mrs. Regueiro's Plate. What I love most about it is that all the leftovers can be transformed into a yummy salad the next day. It was so fast and easy to make, you really just have to cook the chicken and assemble the tacos. This will quickly become a staple in our household. Buffalo Chicken Tacos With Yogurt Ranch Dressing


  • 1 pound of boneless, skinless chicken breast, cubed
  • 1/3 cup of Frank's hot sauce
  • 1/3 cup of corn starch
  • 1 teaspoon of garlic powder
  • corn tortillas
  • 2 tablespoons of olive oil
  • salt and pepper to taste


  • 1 large avocado
  • 2 limes
  • cilantro leaves
  • 1/4 of a red onion, diced
  • 1 packet of Ranch dressing mix
  • 1 quart of non fat Greek yogurt
  • 1/2 cup of blue cheese crumbles
  • shredded lettuce
  • shredded carrots



Heat a dutch oven on your stove top to medium heat. Add the oil to the dutch oven. Cut the chicken breasts into small, 1 inch cubes and season with the salt and pepper. Mix the cornstarch with the garlic powder and place in a large plastic bag. Transfer the chicken to the plastic bag and shake to evenly coat the chicken with the cornstarch mixture. Place the chicken in the dutch oven and brown on each side, about 3 minutes per side. Cover the dutch oven for an additional 3 minutes to fully cook the chicken. Transfer the cooked chicken to a large bowl and coat with the hot sauce. Place the tortillas onto a plate. Dampen a paper towel and place on top of the tortillas. Microwave for 30 seconds to warm them. Mix the Ranch dressing mix with the Greek yogurt to create a healthy sauce. Cube the avocado and juice the limes on top. Assemble the tacos with the chicken, cheese, Ranch dressing, and other veggies. Serve and enjoy!
