Hey guys! Happy Monday! Today I have to share with you another staple recipe in our house, honey maple chicken! It is so so so simple to make and I always make a bit extra to throw into a salad or a sandwich the next day. It almost tastes like a honey mustard sauce (my fave) but it is only 3 ingredients...you cannot beat that! I found the recipe through Rachel Schultz on her self titled blog here. I change it up a bit sometimes, swapping out chicken thighs or tenders for chicken breasts, and I usually leave out the rosemary just to keep it more simple (or because I forget). Anyway, this chicken is awesome and I highly recommend you try it!
Dijon Mustard And Maple Chicken
- 1pound of chicken breasts, thighs, or tenders
- 1/2 cup dijon mustard
- 1/4 cup real maple syrup
- 1 tablespoon red wine vinigar
- salt and pepper
- 1 teaspoon dried or chopped fresh rosemary
Preheat oven to 425 degrees. Sprinkle salt and pepper on both sides of the chicken. In a small bowl, mix together the mustard, syrup, and vinegar. Place the chicken in an oven safe baking dish. Pour the sauce mixture all over the chicken (I mixed my sauce in the dish I was cooking in to save on dishes). Make sure that the chicken is coated in the sauce on both sides. Place in the oven and bake for about 25-35 minutes, depending on the thickness of your chicken. Remove from the oven, sprinkle with the rosemary, and enjoy!
