Yummy Green Beans

Hey guys! Just wanted to share with you another side dish post that I made recently. Sometimes it's hard to get the Hubs to eat his veggies so I have to find ways to add a bit of flavor to them. This particular dish is fresh, French style green beans simply sautéed with shallots, olive oil, lemon, salt and pepper. I hope you enjoy!

Garlic And Shallot Green Beans

   South Beach Diet Phase One And Two


  • 1 bag of French green beans
  • 1 scallion finely diced
  • 1-2 garlic cloves finely diced
  • Salt and pepper to taste
  • juice of 1 lemon
  • 1 and 1/2 teaspoon olive oil for cooking


 If you like your green beans soft, boil for about two minutes in salted water and then place in a bowl of ice cold water to blanch. Then place them on some paper towels to dry. I like mine crunchy, so I skipped that step. Heat a medium skillet over medium high heat. Add the olive oil. Once the oil is hot, add your beans. Cook for about 3 minutes constantly stirring. Add your garlic and shallots. Continue cooking until everything starts to brown, about 5-7 minutes. Add your lemon juice, salt and pepper and serve hot!
