Happy Monday everyone! I know I know, Mondays can really ruin your weekend, but I have to say that today is not that bad. My weekend was amazing. First of all, I found out that I am going to be an aunt to a baby girl!!!! That's right, Travis' brother Todd and his lovely wife Tracy are having a their fourth child (they have already been blessed with three ADORABLE boys) and they found out the sex of the baby over the weekend! They sent us an awesome video of the boys opening a gift with a stuffed monkey inside. The monkey was either pink for a girl or blue for a boy. Everyone, especially Todd, was ecstatic to find a pink monkey inside! The oldest, Liam, needed a bit of convincing, but he came around when Tracy explained to him that the baby could be princess Laia when they played Star Wars.
Besides that wonderful news, I had a great time in Fort Worth on Saturday celebrating a friend's birthday at Billy Bob's, the self proclaimed worlds largest honky-tonk, whatever that means. As an East Cost girl, I felt as if I was on another planet. I had never been to a place where you could hear a concert, dance, mechanical bull ride, watch a pro ride a REAL bull, eat, drink, get your boots shined, go to a Texas themed gift shop, play pool, see the Guinness World Record's largest belt buckle, and so much more, all under one roof. I was amazed by the place, it was nothing short of awesome, and we all had the best time! Also, on Sunday, we had a few friends and neighbors over for some food and football. I love cooking for large groups and actually using our kitchen table instead of our normal coffee table dinner routine. I decided to make chicken fajitas, queso, guacamole, and pico de gallo. I've already let y'all in on my guac recipe, so below is the pico recipe. I hope you enjoy!
- 4 medium roma tomatoes
- ½ of a red onion, diced
- 4 large or 6 small limes
- 1 teaspoon fresh chopped cilantro
- 1 fresh diced jalapeno
- Salt and pepper to taste
Peel and dice the red onion and add to a small bowl. Chop cilantro finely and add to a separate small bowl. Do the same with the jalapeno and place in another small bowl (I like to leave the seeds in, but you may take them out or omit all together if you are sensitive to spice). Heat limes in the microwave for 20 seconds to help release juice. Cut each lime in half. Cut all tomatoes in half lengthwise, squeeze to remove most of the seeds, and finely dice. Place in a large bowl. Add in remaining ingredients and lime juice to the large bowl, tasting as you do so (I like to put everything in small bowls and add slowly so you don't have too much of any ingredient because its hard to eyeball it until you have everything chopped). Serve and enjoy!
