Holy Guacamole!

Hello again my lovely followers. I have decided to focus a bit on recipes this week, healthy ones in particular, to help everyone stick to their new year's resolution. I, for one, always start off the year in hopes of dropping the Christmas weight I always gain and just trying to have a healthier outlook. This particular Tasty Tuesday recipe is a perfect marriage of Travis's and my guacamole recipe. It combines the best of both and leaves out the unnecessary ingredients to keep it simple, yet delicious. I personally like my guacamole to have an abundance of lime juice, Travis loves his to be spicy, and my dad loves red onions in every bite. Also, I hate tomatoes and Travis is not a fan either, so I left them out but feel free to add them to your guac. When I do, I tend to opt for cherry tomatoes because they have less pulp and that keeps it from getting too watery. You really have to play around with the recipe to get it to your liking, so I usually buy an extra avocado to mellow out any heavy handed ingredients I may have added. Be very careful not to add too much cilantro or it can get very bitter, or jalapeno because it can be a bit spicy. I add them in slowly and constantly taste until it is just right. Also, you can do most of the prep work early but wait until right before serving to cut all avocados because the oxidize (brown) very quickly. I promise its very easy to make and great for parties. You can eat it with chips, dip veggies into it, or use it as a topping on taco night. My 5 1/2 year old nephew Liam gave it two thumbs up, and he doesn't even like onions! Enjoy!



The Fruehauf's Famous Guacamole

Ingredients

  • 4 large or 6 small avocados
  • ½ – ¾ of a red onion, diced
  • 4 large or 6 small limes
  • 1 tablespoon fresh chopped cilantro
  • 1 fresh diced jalapeno
  • Salt and pepper to taste




Peel and dice the red onion and add to a small bowl. Chop cilantro finely and add to a separate small bowl. Do the same with the jalapeno and place in another small bowl (I like to leave the seeds in, but you may take them out or omit all together if you are sensitive to spice). Heat limes in the microwave for 20 seconds to help release juice. Cut each lime in half. Cut all avocados in half, remove pits and peel back exterior, and then dice. Place in a large bowl with one avocado pit to help slow down oxidation (browning). Squeeze limes over the avocados to also help slow oxidation. Add in remaining ingredients to the avocados and lime juice while mashing with a fork (I like to leave my guac chunky, so I dice the avocados finely and then only slightly mash them). Taste as you go until you have the desired guacamole. Serve and enjoy!
